No Bake Sweet for the loves in your life

6 years ago I brushed off my photography and cooking skills to help a Business Coach create, test and photograph recipes for her programs. One of the recurring recipes for every season were what we call energy balls, protein balls, power balls (what do you call them)? I made so many of them in different variations. They were delicious, simple and sweet in a pretty healthy way as they are a great mix of sweet, fat, protein and fiber. But as with so many things we do over and over, after making them for a few years, I got burned out. I pretty much stopped making them.

But lately as I find myself craving something a little sweet, I remember how good they were. So I am ready to revisit them

Today I thought it would be fun to share with you a recipe that can be used for two different upcoming traditions. Super Bowl and Valentines Day. They are the perfect treat to bring to parties, school, work or any other venue. Sophisticated enough for adults and kid friendly at the same time.

These make up very simply as you can place all the ingredients in one bowl. Just give yourself enough time to refrigerate them an hour or so as they are much easier to roll when they are chilled.

No Bake Valentine Energy Bites

Ingredients

1-1/2 cup rolled oats

½ cup nut butter of choice

½ cup ground flax seed

½ cup chocolate regular or vegan chocolate chips

½ cup dried cranberries (chopped)

1/3 c honey

1 T. Chia seeds

! 1sp. Vanilla extract.

Shredded coconut (optional)

Instructions

Stir all ingredients together in large bowl until thoroughly combined

Cover the bowl and chill 1-2 hours

Roll mixture into 1 inch balls

As an additional option roll balls into shredded coconut.
